Produced in partnership with our sister farm, Blue Moon Stead: Preferred by chefs and foodies alike, French Grey Shallots are often considered the only "true" variety of shallot, appearing in written records as far back as ancient Greece. An earthy, astringent aroma with a distinct ferric kick makes them unique from either onions or garlic (go ahead, take a whiff!). We dry-farm our shallots without the use of irrigation, resulting in a small yet intensely flavorful bulb. They are best known for their key role in French Vinaigrette salad dressing, but any sauce, soup, dip, or marinade can be improved with a touch of shallots to give it that 'je ne sais quois' that has guests asking, "What's in this that's so good?"
