Muscovy duck meat is highly prized by chefs and foodies alike, being extremely lean and very dark -- cooked slowly at a low temperature, some say the breast meat resembles sirloin steak. Unlike other breeds of duck, Muscovy meat is not greasy, and serves well sliced as an appetizer, or a delicacy for the main course! These 3+ lb ducks are perfect for cozier holiday gatherings of 3-5 people. Raised on fresh pasture and fed a Northwest-based diet free of corn/soy/GMOs, you can't beat the flavor of these happy, healthy ducks. These pin feathers are not harmful, just a matter of aesthetics and texture (the pin feathers can be a bit pointy). If they are bothersome to you, the duck can easily be skinned either before or after cooking. **
