Description

The t-bone steak of the lamb, loin chops contain a portion of the loin and tenderloin and are the leanest, tenderest of the cuts. Cooked quickly on the grill or under the broiler, they develop a caramelized crust and have a pink, juicy center. Katahdin loin chops are a delightful treat coming from a special hair breed developed for its high quality, fine textured, mildly flavored meat. The meat has a significantly lower cholesterol content compared to other lamb breeds according to analysis done by the U of Saskatchewan. Our lambs are raised and finished on their mother's milk, chemical- free Okanogan Highland dryland pastures, and pure well water which gives the naturally tasty and healthy Katahdin lamb a texture and flavor we believe is not obtainable anywhere else.

Our lamb is raised and finished naturally on dryland pasture. We protect our animals with livestock guardian dogs, fences and non-lethal devices.
