Streamline Your Cuts Sheets (and Increase Sales)
As you may be aware, buyers are increasingly “lazy”—expecting everything they purchase online to be easy and completed with the click-of-a-button. Today, 8 out of 10 US adults purchase online every month. Major consumer sites such as Amazon, Best Buy, Dominoes, Starbucks, Target and Walmart have spent billions of dollars investing in online experiences to delight their customers—including anywhere, anytime purchasing across any device (whether ordering a TV, a pizza or coffee).
The patience of buyers is dwindling. Convenience wins—period. This is what your Farm will need to win prospective buyers who may have no familiarity with your brand or products. Even your current buyers who have been loyal customers to date—who have only had limited or cumbersome access to purchase from you—will prefer a “simple” online purchase experience (versus calls, forms, emails, and long explanations). And yes, this includes their experience when purchasing custom meat(s)!
COMMON FARM PRACTICES
Today, the practice of requiring livestock buyers to make a series of decisions on a lengthy cut sheet must evolve to meet buyer expectations. The common practice employed by many Farmers requiring buyers to “download” an order form and complete specific processing instructions is time consuming and overwhelming—and for many prospective consumers, too confusing. Worse yet, many Farmers require each buyer to call them (or a butcher) as part of completing a custom cut sheet order.
While a side of beef may be a significant investment, consumers today routinely spend thousands of dollars online purchasing a wide variety of products (sight unseen). To that end, Farmers must recognize that prospective buyers are increasingly willing to place significant orders for your products online—provided the experience is simple and information is available at the buyer’s fingertips.
MOVING TO “STANDARD” CUT SHEETS
A practice we have helped many farms implement is a move to “Standard” Cut Sheets for their livestock, enabling prospective buyers to browse two or three cut options for a given product. The goal of this model is to simplify the decision-making process and inform buyers of available cuts with each option (versus offering an open-ended cut sheet that may be prone to error). As a Farmer, you know your butchering selections impact the available cuts (this is new information for many consumers).
As a result, “Standard” Cut Sheets enable Farmers to effectively direct a customer down predefined options for available cut options of a quarter-side of beef, half a hog, or a whole lamb. Your butcher will love you, too.
SIMPLIFY ALTERNATIVES, INCREASE ORDERS
Simplifying the cut sheet order process is a good thing, given any effort to improve convenience translates to time savings for buyers and Farmers alike. Rather than presenting your prospective buyers with additional steps to complete an order (i.e. fill out this form, call me first, make a long series of decisions on cuts), your buyers should be able to select their preferred “Standard” Cuts and complete their order online right away without any impediments (paying you a deposit today, choosing ‘cuts’ option and selecting their preferred pickup/delivery option).
By simplifying the order process, you will increase buyer conversion and orders overall. Surveys indicate that 92% of prospective buyers prefer self-service ordering. As a result, every step you take to eliminate “offline” steps (filling out forms, placing calls to confirm details) will substantially improve order outcomes. Interestingly, by simplifying this process for buyers, you also save your Farm time by eliminating unnecessary back-and-forth steps that can be automated online.

CHARGE A PREMIUM FOR CUSTOM CUTS
While we often see more than 90% of a Farm’s business transition to “Standard” Cut Sheets for their livestock orders, some Farmers do choose to maintain a “Custom” Cut Sheet that is available at a premium. Realistically, we see Farms charge a $50-$200 premium for “Custom” Cut Sheet orders given increased time or cost requirements for both Farmers and butchers. Ultimately, it is a Farmer’s prerogative on what to charge for special orders. How much do you value your time? Is your processor flexible? Or, does your processor charge you a premium for “Custom” Cut Sheets too?
